"Wild beers don’t just happen overnight. Many of these ales are fermented and aged in oak barrels or foeders in our temperature-controlled wood cellar. These beers could age anywhere from a few months to a few years. A wide variety of these beers lay in wait in wine, liquor, or other barrels. You’ll also see our custom-designed coolship, where some of our beers are open fermented which to let even more funk develop in our one-of-a-kind beers.
